Phase separation. Physical stability of W/O emulsions prepared using vortex, syringe-extrusion or homogenizer for ten minutes as determined by the separation of the oil phase from the emulsion. % phase separation is measured by taking the height of the oil phase/(total height of emulsion sample × initial fraction of oil in emulsion) × 100. The mean % phase separation and standard error of the mean of four emulsion samples prepared using vortex, syringe-extrusion or homogenizer is shown over time.
